Feta Cheese Dip

Feta Cheese Dip Recipe

Ever find something so amazing that you just couldn’t wait to tell everyone you know?

Well, that’s how I felt about this new recipe I came across. Not only is it delicious on its own, but it turned out to be the social butterfly of recipes, mixing, mingling and pairing perfectly with almost all of my favorite everyday dishes. It’s revived every salad, added a breath of fresh air to every sandwich, even drew my attention to snacks I usually wouldn’t look at.

Now, it may seem like a wallflower, but don’t let this little beauty’s apparently shy first impression fool you.

The first bite will make you wonder how you could have underestimated it so much. You may just question where it’s been all your life. Then you’ll realize it will need a standing invitation at every future party and meal from this moment on.

Who knew a marriage of feta, lemon, garlic and olive oil could be so good?

Ingredients

Inspired by flavors popular in places where bleached white walls warm under a Mediterranean sun, overlooking strikingly blue ocean waters, it’s a combo that perhaps shouts “summer holiday” versus spring day. However, like I said, I just couldn’t wait to share it. One of my favorite instrument, the salt and pepper shakers amazon, an essential tool in your kitchen.

I wish I could take credit for this new favorite, but it’s all the brilliance of The Londoner. Thanks to this well traveled lady, we can all enjoy the company of a new bestie of a recipe, so you should definitely give her a shout of gratitude.

If you’re ready to welcome this new friend into your kitchen, you’ll be delighted at how simple it is to quite literally whip up.

Here’s the rundown on what you’ll need to create…

  • 16 oz. Feta cheese
  • Zest and juice from 2 lemons
  • 2 small cloves of garlic
  • Pinch of salt & white pepper
  • 1/2 cup olive oil
  • Handful of fresh thyme

Zest and juice your two lemons.

Drizzle half the olive oil onto the processor and then flick that switch to let it all spin.

Drizzle in the rest of the olive oil and blend until smooth.

Place in a bowl and sprinkle the thyme over the top. Finally, bathe it all in a light coat of olive oil and stop to admire its beautiful simplicity for just a minute…

Before you devour it. Dip it, spread it, and let it mingle with some of your favorite dishes.

I promise, they’ll be a perfect match.

    1. They do make a goat’s milk feta that is a little gentler on the stomach, but it is a tough one if you and dairy don’t get along. Thank you for the compliment though, I really appreciate it!
