Armed with one eye catching bar cart, it’s time to talk about what you’ll be mixing up off it!
Whether you’re getting fancy for some festivities you’re hosting, or if it’s just you alone on a hot night after a long day, you should always be ready with a doozey of a cocktail. I’ve got just the ticket for summer too.
This little peach number is a perfect blend of summer freshness. (An added bonus is that you can omit the alcohol and be left with a delicious spritzer.)
It all starts with a peach-infused simple syrup that you’ll want to have gallon of on-hand all summer once you taste your first sip (I hear it’s great for iced teas).
Peach Simple Syrup
Ingredients:
1 cup Water
1 cup Sugar
2 Peaches, peeled, pitted and chopped
Directions:
Combine everything in a medium saucepan, stir and bring to a boil.
Reduce the heat and let the mixture slowly bubble away at a simmer until the sugar is all completely dissolved.
Remove from the heat and let cool down for about a half hour (The peaches really meld with the sugary water at this point and thickens up). Then just strain the peaches from the syrup and store your syrup in a glass bottle in the fridge until you’re ready to use.
You should get about a cup and a half of syrup (if you manage not to drink half of it from the start).
From there it’s gets a bit more wild…
Just Peachy [& Blueberry] Cocktail
(Makes 1 glass)
Ingredients:
4 leaves fresh mint (plus a sprig for garnish)
4-8 (small handful) fresh blueberries
1/2 cup soda
2 ounces of peach simple syrup (recipe above)
2 ounces white rum
Directions:
Muddle the fresh mint leaves and few blueberries in the bottom of your glass.
Add your soda, peach simple syrup and white rum.
Give it a little stir with a straw or long spoon and drop a few more whole blueberries in.
Top with a sprig of mint.
Pause to appreciate it’s beauty. Taste Drink!
Repeat if necessary (or if you’ve just got a few relaxing hours to kick back).
